1. StarchMate^®: The Glycemic Index(GI) reducing Agent for Starch Food

The glycemic indexGI) is a relative ranking evaluating the effect of carbohydrates in food on blood glucose levels. High-GI foods like rice or bread which are rich in starch which is quickly digested into easily absorbed glucose by intestinal a-amylase and a-glucosidase and increase blood glucose level. StarchMate^®, a heat-stable polyphenol-rich seaweed extract, efficiently inhibits starch-digestion enzymes and retards glucose releasing rate. The blood glucose levels of volunteers were reduced after taking bread or cooked rice containing StarchMate^®. StarchMate^® could be formulated to produce low-GI foods like bread, noodle, rice, gruel, instant oatmeal and a ready-to-cook StarchMate^® coated rice has been developed.
